          "body": "Our yard sits inside the Byadgi APMC belt in Haveri district, Karnataka - the single largest dried red chilli market in the world, and the reference point traders across India watch when they check the Byadgi chilli price on any given morning. Buying at the source means we grade lots ourselves rather than accepting whatever a middleman has already blended. Byadgi (often spelled Byadagi) chilli is bought for colour, not heat. The wrinkled, deep-maroon pods of varieties like 2043, 5531, Dabbi and Kashmiri-type run roughly 80–150 ASTA with mild pungency, which is why oleoresin extractors and masala houses specify them by name. Where a buyer needs bite instead of tone, we pull from Guntur in Andhra Pradesh - Teja S17, Garuda and C5 Sannam carry the pungency, from around 35,000 SHU up past 100,000 SHU."
